Sweet Mango

Ingredients:

1/2 cup butter, melted
1 and 1/2 cup crashed graham crackers
1 tbsp. unflavored gelatin
1/4 cup evaporated milk
1 cup (300 ml) condensed milk
1/8 tsp. salt
3 fresh egg (separate egg white and egg yolk)
1 tsp. vanilla
1 cup all-purpose cream
2 cups sweet mangoes, scooped into balls (mango balls for garnish)

How to prepare:

1. Mix butter and graham crackers.
2. Press a round sides and bottom of a 9" pile plate. Chill
3. Soften gelatin in cold water. Add to evaporated and condensed milk, and salt on top of double boiler. Cook stirring until gelatin is dissolved.
4. Beat eggyolks slightly. Add to the heated mixture.
5. Cook until slightly thick. Chill.
6. Fold in stiffly eggwhites, vanilla, and mangoes.
7. Pour into prepared crust. Chill until firm.
8. Garnish with whipped cream and mango balls.
